So I finally got tired of eating all the leftovers…but still had lots of left overs! So last night I looked up leftover recipes and gave one a try! I made a leftover stuffing/turkey quiche and it was awesome! Even the kids loved it…so you know that means it’s good…lol

Here is the original recipe found on Cooks.com:

TURKEY QUICHE

2 1/2 to 3 c. left over stuffing or one 6 oz. pkg. chicken flavored stuffing mix
5 1/3 oz. can evaporated skim milk
1 c. chopped cooked turkey
1 c. shredded Swiss cheese
4 beaten eggs or egg substitute equivalent

If using stuffing mix, prepare according to package directions. Press leftover or stuffing into 9 inch pie plate or quiche dish, forming a crust. Bake in a 400 degree oven for 10 minutes. Meanwhile, combine meat and cheese. In another bowl beat together eggs, milk, and 1/8 teaspoon pepper. Sprinkle meat-cheese mixture into hot crust. Pour egg milk mixture atop. Lower oven temperature at 350 degrees. Bake quiche 30-35 minutes or until center is set. Let stand 10 minutes before serving. Garnish with tomato wedges, if desired. Makes 6 servings.

HOWEVER…I made some changes to this recipe and here is my new one!

*April’s Stuffed Turkey Quiche

4 cups – left over stuffing
7 oz. evaporated skim milk
2cups – chopped cooked turkey
2 cups – shredded Colby cheese
6 beaten eggs

Press leftover stuffing into pie plate or quiche dish, forming a crust. Bake in a 400 degree oven for 10 minutes. Meanwhile, combine meat and cheese. In another bowl beat together eggs, milk, 1/8 teaspoon pepper, a dash of salt, and a little seasoned salt. (note: I also think putting a little Tony Catcheries in place of the seasoned salt would be excellent, but since it was my first time with the kids I played it safe). Sprinkle meat-cheese mixture into hot crust. Pour egg milk mixture atop. Lower oven temperature at 350 degrees. Bake quiche 30-50 minutes or until center is set. (cook time depends on dish used like my stoneware takes longer…but it never burns things so I prefer it over others.) Then Let stand 10 minutes before serving.

(one of the reasons I increased amounts is because my family of four needs more than a 9 inch pie to feed on..lol and I wanted to use my big stoneware pie dish…which is about 13″ or so)
